Vegan and gluten free blondies

An easy and delicious dessert recipe that will be requested by many. I love making this for potlucks and when friends come over. Enjoy!


Ingredients:

1 cup pure cane sugar

1/2 cup vegan butter-melted

2 flax "eggs" (1 TBS ground flax +3 TBS water PER "egg")

1 teaspoon vanilla extract

1-1/2 cups almond flour

1/2 tsp baking powder

1/2 tsp salt

1 cup vegan chocolate chips



Pre-heat oven to 350 degrees F

Grease a 8X8 baking pan and set aside.

in a bowl whisk together sugar, butter, flax eggs and vanilla. Set aside.

In a separate bowl, mix together almond flour, baking powder and salt.

Add dry ingredients to wet ingredients and mix well. Add the chocolate chips and mix it all together.

Pour the mixture in to the greased pan.

Bake at 350degrees for 15 minutes, lower the heat to 325degrees and bake for another 10-15 minutes until the top is slightly browned.


Its delicious warm or cold!
